Creamy Smoked Salmon Pasta
I made this Sunday night and oh, boy is it delicious! In Justin’s words “Yummy times a million” so I knew I’d have to share it here. The best part is that it’s a super quick and easy dish that tastes like you’ve spent a lot longer in the kitchen. A perfect date night or dinner party meal. Impress a special someone (or yourself!) this weekend and cook up this little number.
1 tbsp olive oil
1 cup of frozen peas
2 cups of spinach
1 piece of hot smoked salmon, chopped into bitesized pieces
1/2 cup of cream*
salt + pepper
parmesan cheese for serving
* I’ve made it with a bit of coconut milk one time when someone had used the rest of the cream I had planned on using for this. Let me tell you, it is still good but not as good. I want to try ricotta instead of cream for a bit of a lighter result.
* I really like brown rice/quinoa pasta so that’s what we usually have on hand but go ahead and use your favourite.
Put on water to boil for your pasta and cook as directed.
While your pasta boils, sauté peas and spinach in olive oil over medium high heat.
Once the spinach has wilted, remove the skin from the salmon, add bite sized pieces to the pan and let it heat through.
Add the cream and let it reduce slightly.
Add salt and pepper to taste.
Add cooked pasta to the pan and mix everything well.
Serve with parmesan cheese and a green salad on the side. Yum!
